Fried Chicken Wings, Candied Yams, Deviled Eggs & Collard Greens

Fried Chicken Wings: Ingredients:

  • 2 pounds chicken wings
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Vegetable oil for frying

Instructions:

  1. In a large bowl, combine buttermilk, salt, black pepper, paprika, and garlic powder.
  2. Add the chicken wings to the bowl and toss to coat them in the marinade. Let them marinate for at least 1 hour or overnight in the refrigerator.
  3. In a separate bowl, mix the flour with additional salt, black pepper, paprika, and garlic powder.
  4. Heat vegetable oil in a deep skillet or pot to about 350°F (175°C).
  5. Remove the chicken wings from the marinade and dredge them in the flour mixture, shaking off any excess.
  6. Carefully place the coated wings into the hot oil and fry until golden brown and crispy, about 10-12 minutes. Cook them in batches if necessary.
  7. Remove the fried chicken wings from the oil and drain them on a paper towel-lined plate. Serve hot.

Candied Yams: Ingredients:

  • 4 medium yams or sweet potatoes
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Mini marshmallows (optional)
